Dinner service is indoors only — the deck is a lunch and ceremony space, not an evening one.

The kitchen

The Kitchen at Alpino Vino

Cooking here is harder than cooking anywhere else in Telluride. There is no gas line at 11,966 feet, so the kitchen works on portable induction. There is no delivery road either — every ingredient comes up the mountain by snowmobile or snowcoach before service.

What comes out of it is Northern Italian and made from scratch: pasta rolled by hand, sauces built in-house, and a menu that changes through the winter with what can be got up the hill. The wine programme is run by Wine Director Andrew Shaffner, whose list features one of Colorado’s deepest Brunello collections alongside a broader selection from Italian and American producers, with optional pairings poured course by course.

Baking is the hardest thing to do at this altitude — low air pressure changes how dough rises and how anything sets. The bread is not baked on the premises for that reason; it comes up fresh from town.Pending confirmation

The difficulty is well enough known that Bravo built a challenge around it: in the Colorado season of Top Chef, which aired in 2018, the final four cooked at Alpino Vino and each had to put a baked element on the plate.

The menu is set for each winter and finalised when the restaurant opens in mid-December, so the courses change from season to season.
